1½ cups macaroni, gluten free if preferred, cooked according to package
1 tsp. butter or vegan butter alternative
1 Tbls. all-purpose flour
1 cup 1% calcium fortified lactose free milk or dairy free milk
1 cup Fat-free cream
2 cup low-fat white cheddar cheese
¼ cup grated low-fat parmesan cheese
Salt and white pepper to taste
1. Mix flour and butter to form paste. Add salt and white pepper.
2. Mix in milk and cream.
3. Stir until mixture is thick.
4. Add white cheddar cheese slowly.
5. Mix with pasta.
Serve with deep green tossed vegetable salad—add diced carrots, tomatoes, and mushrooms, spray with organic olive oil spray and season fresh with oregano, basil or seasonings your choice) to fortify the meal with vitamins, minerals, phytochemicals and fiber.
