Last Man on The Field “Safety” Chicken and Broccoli Stir Fry

​Serves 1

Ingredients:

6 oz. of chicken breast
½ tsp. Ginger root, grated
1 garlic clove
½ small scotch bonnet pepper- chopped
½ red pepper sliced, large
¼ red onion
¼ green pepper
½ cup broccoli
6 snow peas
¼ cup bamboo shoots
¼ sweet potato- cut into small cubes
1 tsp. low sodium soy
1 tsp. rice wine vinegar
1 tsp. sesame oil
1 tsp. sesame seeds
1 tsp. of cilantro
¾ cup of cooked brown basmati rice
Organic vegetable oil spray
salt and pepper to taste

Method:

1. Cut chicken into long thin strips and place in bowl.

2. Mix ginger, garlic, salt and pepper and chili- coat chicken strips

3. Heat large pan or wok on high- spray with cooking spray

4. Add chicken- stir fry til golden brown

5. Add onion and peppers until semi-soft

6. Add snow peas and broccoli

7. Mix soy, rice wine, sesame oil- Add to stir fry

8. At the end add sesame seeds and cilantro

Chef Notes:

* Variation- Use ½ boneless chicken thigh or beef loin

* Dish can be varied many ways by use of different vegetables such as bok choy, spinach, carrots, celery

* Rice can be cooked in ½ water and ½ stock, laced with fresh cilantro, green peas and topped with crushed toasted peanuts
